Keto Slow Cooker Spicy Pumpkin Chicken

I found this recipe on the King Soopers website believe it or not, and was so happy I did. While I do not adhere to a strict keto diet, I do think that using cauliflower rice rather than regular rice helps my tummy. But if you hate cauliflower rice then feel free to use regular ole white rice (meet in the middle with brown rice?). Feel free to substitute the chicken as well for any non-meat substitute. Also, who doesn't love something you can simmer in the crockpot for hours? The smell and the ease are enough to make me fall in love with this recipe.

Ingredients

  • 1 cup chicken broth
  • 1 cup pumpkin purée
  • 1⁄4 cup hot pepper sauce
  • 1 tablespoon salt
  • 2 teaspoons garlic powder
  • 2 teaspoons ground black pepper
  • 1 teaspoon ground cayenne pepper
  • 3 pounds boneless skinless chicken thighs
  • 8 ounces cream cheese, softened and cut into pieces
  • Cauliflower rice, hot
  • Chopped parsley, cilantro, and/or chives
  • 1 cup chicken broth
  • 1 cup pumpkin purée
  • 1⁄4 cup hot pepper sauce
  • 1 tablespoon salt
  • 2 teaspoons garlic powder
  • 2 teaspoons ground black pepper
  • 1 teaspoon ground cayenne pepper
  • 3 pounds boneless skinless chicken thighs
  • 8 ounces cream cheese, softened and cut into pieces
  • Cauliflower rice, hot
  • Chopped parsley, cilantro, and/or chives

Directions

  • Step 1
    In small bowl, combine salt, garlic, pepper and cayenne. Season chicken thighs with spice mixture.
  • Step 2
    In bottom of 5-quart or larger slow cooker, mix together chicken broth, pumpkin, hot sauce and spiced chicken.
  • Step 3
    Cover; cook on low 4 to 5 hours, until chicken is tender.
  • Step 4
    Using two forks, shred chicken. Stir in cream cheese.
  • Step 5
    Serve chicken over cauliflower rice and garnish with chopped herbs, if desired.
